Nutrition Works: Squash Fritters

Our Nutrition Works team works to provide our clients with recipes detailing how to create healthy dishes and treats with the ingredients that they are bringing home from our mobile markets.

When the squash and zucchini you planted earlier this spring begin to bloom, we suggest that you try Nutrition Works’ squash fritters recipe.

Squash fritters are a tasty way of transforming your squash and zucchini into a delicious treat that is perfect for the summer months.

Squash Fritters

– 2 cups local summer squash, grated
– 2 local eggs, beaten
– 1/4 cup chopped onion
– 1/2 cup all purpose flour
– 1/2 cup grated Parmesan cheese
– 1/2 cup shredded mozzarella cheese
– Salt and pepper
– Stir well enough to distribute the ingredients evenly.
– 2 tablespoons vegetable oil
– Heat a small amount of oil in a skillet over medium-high heat.
– Drop squash mixture by heaping tablespoons onto skillet
cook for a few minutes on each side until golden
– Serve warm.

Los Buñelos de Calabacín de Verano

– 2 tazas de calabacín de verano. Rallado
– 2 huevos locales, batidos
– 1/4 taza de cebolla picada
– 1/2 taza de harina común
– 1/2 taza de queso parmesano rallado
– 1/2 taza de queso mozzarella rallado
– Sal y pimienta
– Revolver bien y distribuir los ingredientes uniformemente.
– 2 cucharadas de aceite vegetal
– Calentar una pequeña cantidad de aceite en una sartén a fuego medio-alto.
– Poner las cucharadas grandes de la mezcla en la sartén y cocinar por unos minutos en cada lado.
– Servir caliente
